BBQ Beef Taquitos

 

Sometimes it can be a little challenging trying to find a meal that the entire family will love without having to eat chicken nuggets and applesauce all the time. I was really excited to come across this recipe a few weeks ago because I KNEW everyone would like these. And I was right! My toddler loves taquitos anyway so he didn't even have to taste them to know they would be delicious. This recipe is totally kid friendly and tastes so yummy. The mixture reminded us of sloppy joes. You can't go wrong there!


BBQ Beef Taquitos

  • 1 lb ground beef
  • 3 Tbsp cream cheese, softened
  • 1 tsp. powdered ranch dressing mix
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic salt
  • 1 c. BBQ sauce
  • 1 c. colby or monterey jack cheese, shredded
  • 15 small flour tortillas

Brown the ground beef in a saute pan until completely cooked. Don't worry about seasoning it, you'll add that to the mixture later.


In a large bowl, combine ground beef, cream cheese, ranch dressing mix, onion powder, garlic salt, BBQ sauce, and cheese. Stir until well combined. Add salt if you feel like it needs a little more flavor.


Place a few spoonfuls of the mixture down the center of each tortilla. Roll up and place on a greased cookie sheet. Repeat with all remaining tortillas until mixture is gone.

Bake at 400 degrees for 15 minutes or until lightly brown on top and edges.
