These cupcakes are divine. These magical drops of heaven are sure to be a crowd pleaser at the next bake sale, family get-together, friends gathering, etc. I can't resist this combination anyway, but then put it in a cupcake? I'm sold!
The recipes for the frosting and cake come from two different blogs. I learned something new about how to make a box cake mix taste a little more exciting and homemade. I'll be the first to admit that I'd rather bake a cake from a box than make it from scratch. The recipe for the chocolate cupcakes is just awesome and so easy it makes me want to cry. And it's amazing how much better a cake mix can taste by adding a couple of ingredients! I'm excited to make this recipe into a regular cake sometime. These chocolate cupcakes combined with the peanut butter frosting really make a perfect cupcake. You'll understand when you bake these little guys yourself! Trust me on this one. Chocolate Cupcakes with Peanut Butter Frosting
Chocolate Cupcakes from Whipper Berry
- 1 box chocolate cake mix (Any kind will do! Choose your favorite.)
- 1 c. mini chocolate chips
- 1 c. sour cream
- 1 small pkg chocolate pudding (3.5 oz box)
Peanut Butter Frosting from Annie's Eats
- 8 oz. cream cheese, at room temperature
- 4 Tbsp unsalted butter, softened
- 1/2 c. creamy peanut butter
- 3 1/4 c. powdered sugar
- 1 c. Cool Whip or other whipped topping, thawed
Directions
Prepare the cake mix as directed on the box. Then add sour cream, pudding, and chocolate chips. Pour 2/3 full into prepared cupcake liners. Bake as directed on the box. Because of the added ingredients you may need to add a couple of minutes onto the baking time, depending on your oven. Check one of the cupcakes with a toothpick to make sure before adding the extra time. Place on a wire rack to cool.
Time to make that amazing frosting! In an electric mixer, beat cream cheese, butter, and peanut butter together on medium speed until smooth. Slowly add powdered sugar until well combined. Gently mix in whipped topping until smooth and fluffy. The whipped topping really cuts that sweetness down just enough to give this frosting an excellent balance. Once the cupcakes have cooled, frost the cupcakes to your liking. That is if you have any frosting left after the taste test. I like using a 1M star tip from Wilton for cupcakes (as seen above).
