Peanut Butter Chocolate Chip Muffins

Yu-um!! That is the first word that comes to mind when I bite into one of these little babies. I love how these muffins can satisfy a sweet craving at any time of the day. They can serve as a snack during the day time or a treat after dinner. They’re so moist and delicious! They remind me of home. I love food like that.

Ingredients

  • 1 c. all-purpose flour
  • 1 c. wheat flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2/3 c. creamy peanut butter
  • 2 Tbsp. butter, softened
  • 1 c. brown sugar, packed
  • 2 large eggs
  • 3/4 c. milk
  • 2 c. (12 oz package) Nestle Tollhouse Semi-Sweet Chocolate Mini Morsels

Directions

  1. Preheat the oven to 375 degrees. Grease 18 cups in the muffin tin or paper line 18 of the cups in the muffin tin.
  2. Combine both flours, baking powder, and salt in a small bowl. Beat butter, peanut butter, and brown sugar in a large mixer bowl until creamy. Add eggs and milk; beat until smooth. Add flour mixture to peanut butter mixture; beat until just blended. Stir in the morsels with a spoon. Spoon the batter into the paper lined cups or greased cups about 3/4 of the way full.
  3. Bake for 18 to 20 minutes or until a toothpick inserted in the center comes out slightly sticky. Cool in the pans on a wire rack for about 5 minutes; remove to wire racks to cool completely. Store in airtight containers.
